how do i train a dog to help me stalk live deer?

i have been hunting for a while and am keen to train a dog to hunt by my side. i’ve looked up tips online but its all for tracking dead or wounded animals but i want to be tracking live deer, any pointers?

how to train your dog to walk with you while off leash?

I want my dog to walk next to me while off leash. when I unclip her leash she runs everywhere comes back when she is tired…she always comes back but I let her off at a park where there are dear and she freasks out everytime she sees one and she will do anything to chase one….so how can I train her to stay by my side while off leash?
of course I have never let her chase a deer, if I see any I keep her on leash
